Meatless Mexican Chili

 For those who enjoy the spice of Mexican food without the beef, here's a great recipe for Meatless Mexican Chili. Serves 6




  • 1 tablespoon canola oil

  • 2 cups chopped onion

  • 4 garlic cloves, minced

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 14.5-oz can diced tomatoes

  • 2 teaspoons unsweetened cocoa powder

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1 cup low-sodium vegetable broth

  • 8 oz zucchini, diced

  • 1 cup thawed frozen corn

  • 1 15-oz can low-sodium red kidney beans, drained and rinsed

  • 4 tablespoons grated cheddar

  • 4 tablespoons low-fat sour cream



  1. In a large pot, heat oil over medium heat.

  2. Add onion, garlic and peppers and cook until soft, 5 minutes. Add tomatoes, cocoa powder, seasonings and broth; bring to a boil, reduce to simmer and stir in zucchini, corn and beans.

  3. Cook until chili is thick, about 20 minutes.

  4. Divide into four bowls; top each with 1 tbsp cheddar and 1 tbsp sour cream.
